Warmer temperatures, blooming tulips, and fresh strawberries. It must be spring.
With its perfect combination of sweet and tart, this is one of my all-time favorite salad recipes. Couple it with grilled seafood, or just toss some grilled chicken in there to make it a meal. I hope you enjoy it.
Ingredients:
1 package fresh spinach, washed
1 quart strawberries, quartered
1 purple onion, sliced into skinny rings
½ cup coconut (or slivered almonds, if you prefer)
For the dressing:
½ cup sugar
¼ cup raspberry vinegar
2 Tbsp. sesame seeds
¼ tsp paprika
½ tsp Worcestershire sauce
½ cup oil
Toss together spinach, strawberries, onion, and coconut.
For the dressing, combine vinegar and sugar in a cruet and shake until sugar dissolves. Add sesame seeds, paprika, and Worcestershire. Add oil and shake vigorously. Toss with salad and serve immediately.

More on the very fictional Amanda and her story, Finding Amanda:
Chef and popular blogger Amanda Johnson hopes publishing her memoir will provide healing and justice. Her estranged husband, contractor and veteran soldier Mark Johnson, tries to talk her out of it, fearing the psychiatrist who seduced her when she was a teen might return to silence her.
But Amanda doesn’t need advice, certainly not from her judgmental soon-to-be ex-husband. Her overconfidence makes her vulnerable when she travels out of town and runs into the abuser from her past. A kind stranger comes to her rescue and offers her protection.
Now Mark must safeguard his wife both from the fiend who threatens her life and from the stranger who threatens their marriage.
